The Island Smokery have been smoking on the island for over 10 years. Our smoking process uses only
high quality wood supplied by craftsman Eoin Leonard, from Stromness based Celtic drum makers,
Belgarth Bodhrans. We take all of Eoin’s offcuts and unwanted wood, which reduces his waste and
avoids the need for us to transport suitable wood into Orkney.
